      <image:title>Blog - Nutritious Yet Delicious Pumpkin Muffins - What to do:</image:title>
      <image:caption>First, preheat the oven to 350 degrees and prepare your muffin tin. You can either grease the muffin slots with cooking spray or line them with muffin liner cups. Next, mix dry ingredients in a large mixing bowl : oats, spices, salt and baking power. Then, add wet ingredients to the bowl: pumpkin puree, syrup, egg, vanilla, and milk. Combine until all ingredients are evenly incorporated. Finally, mix in whatever additions you wish! We went with dark chocolate chips, but nuts and dried cranberries are also great options. Put one generous scoop of batter in each muffin cup and fill to the brim since these muffins don’t rise much. Bake for 30 minutes and let cool completely (about 15 minutes) before trying to remove from the tin- otherwise they might fall apart! You can enjoy immediatly after cooling or store them in a tupperware or tightly wrapped in foil for up to four additional days. See! This recipe has minimal prep and clean up time and provides breakfast all week!</image:caption>

      <image:title>Blog - Plant-Based Pumpkin Bars - Preheat oven to 350 degrees. Mix the crust ingredients in a mixing bowl until combined. Line the bottom of baking pan with crust- press down with fingers to make it even. Bake for about 20 minutes or until crust starts to brown.</image:title>
      <image:caption>While the crust bakes, stir the filling ingredients in a mixing bowl. Combine until all ingredients are evenly integrated. When the crust is ready, pour filling over the crust and smooth with a spatula to create an even surface. Bake for 45-50 minutes. The top of the bars may looked cracked- this is totally normal! Remove from the oven and cool in the refridgerator to set- don’t skip this step! Cool for at least 2 hours, but preferable overnight. Once the bars are set, you’re ready to slice and serve!</image:caption>

      <image:title>Blog - Not Your Average Stir-Fry - The final steps:</image:title>
      <image:caption>Combine the remaining ¼ cup oil with soy sauce, rice vinegar and chili flakes in a small bowl and stir until incorporated into a smooth sauce. Drizzle sauce over the stir fry (be sure to save a little sauce for later). If you decided to go with shirataki noodles, stir them into the veggies as the final step, making sure everything is evenly coated with sauce. (These shirataki noodles are really cool- almost no carbs or calories, yet they taste like regular rice noodles). Lastly, remove the wok from heat and serve up your stir fry into bowls. Top the bowl with cubes of crispy tofu! Drizzle with remaining sauce. Feel free to add a little bit of your favorite hot sauce for an extra zing!</image:caption>

      <image:title>Blog - Not Your Average Stir-Fry - Start with the tofu:</image:title>
      <image:caption>First, heat ¾ cup vegetable oil in the wok over high heat. Pat the tofu dry to remove excess water. Next, cube tofu into bite sized pieces. Be mindful that larger pieces will stay together better- small pieces are likely to crumble. Once tofu is cubed, coat each piece with a light layer of cornstarch. This is best done by putting cornstarch in a shallow bowl and dipping tofu pieces one at a time. Once coated, place tofu pieces in hot oil for 10 minutes, flipping halfway through. We did our tofu in two batches, since all the tofu didn’t fit at once. Once all the tofu is fried and crispy, set aside on a paper towel. They should be golden brown.</image:caption>

      <image:title>Blog - Not Your Average Stir-Fry - Next step is the stir fry:</image:title>
      <image:caption>Dump most of the hot oil out of the wok but keep a little in the bottom. Add minced garlic and stir over medium heat. After 2 minutes, add broccoli florets and stir periodically for 5 minutes. Once broccoli starts wilting and softening, add snap peas, bells pepper and onion. Stir periodically for 10 minutes. When peppers and onions are softened, finally add mushrooms and cabbage (slaw). Keep stirring wok for at least 5-10 minutes, so veggies can evenly cook throughout.</image:caption>

      <image:title>Blog - Lemon Pepper Chicken Wings with "Ranch" - For the wings: Prepare wings by first blotting off the moisture with a paper towel. The dryer they are, the crispier they’ll be! Once dried, pour raw wings into a large mixing bowl.</image:title>
      <image:caption>Next, coat with lots and lots of lemon pepper. Drizzle with olive oil and stir until all are evenly coated. For the cooking, you can simply bake in the oven at 425 degrees for 30 minutes by laying wings out on a baking pan. However, we decided to grill the wings to get that delicious smoky flavor.</image:caption>

      <image:title>Blog - Chicken Parm Party! - How its done:</image:title>
      <image:caption>First, preheat oven to 425 degrees. Prepare chicken breasts by cutting them in half long ways to create 4 thinner pieces. Crack the egg in a large bowl and whisk until smooth. Drop chicken in egg mixture and stir until breasts are evenly coated on both sides. Next dip both sides of each breast in the breadcrumbs so they are evenly coated without bald spots. Heat a skillet with the olive oil over high heat. Brown each chicken breast by placing in the hot skillet for just 2-3 minutes each side - don’t worry, we’ll be finishing them in the oven, this is just for crispiness and color. Next, place browned chicken in a large baking pan. Pour marinara sauce over and around each breast evenly so they’re all coated for optimal moistness. Lay mozzarella rounds (or cubes) on top of chicken, even distributed. Finally, top with parmesan and basil, sprinkling evenly over everything. Let it bake for about 40 minutes or until the top cheese layer is crispy and browned (but not burnt!). Be sure to let this cool for at least 15 minutes before serving because that cheese will be hot.</image:caption>

      <image:title>Blog - Feeling Stiff? - 3 Simple Keys to Spine Mobility - ROTATION</image:title>
      <image:caption>Spending prolonged hours seated, especially in a forward rounded position, like writing at a computer, is particulary damaging to our rotational mobility. This is because sitting while hunched tightens upper back muscles and compresses the low back joints. Twisting the spine lengthens the mid/upper back and relieves pressure on those lower joints. As seen in the photo, sit with one leg out straight and step the other foot over the straight leg, pulling the bent knee in towards you. Twist in the direction of the bent knee, looking behind you and hold. Don’t forget to repeat on the second side.</image:caption>
    </image:image>

      <image:title>Blog - Feeling Stiff? - 3 Simple Keys to Spine Mobility - FLEXION</image:title>
      <image:caption>Back flexion exercises are particularly important for anyone with low back pain, or sciatic flare ups, as they tend to take pressure off the lower vertebrae. As seen in the photo, flexion exercises round the spine as you bend forward. Flexion exercises may not be for you if you already have a hyper rounded back or kyphosis. For most folks, however, spinal flexion is healthy and essential. Try sitting in a comfortable position, tucking chin to chest, and reaching elbows towards the floor and your draw your belly button in towards the spine. Hold for 30-60 seconds.</image:caption>
    </image:image>

      <image:title>Blog - Feeling Stiff? - 3 Simple Keys to Spine Mobility - EXTENSION</image:title>
      <image:caption>Back extension exersises must be done with a tight core. As seen in the photo- a cobra stretch is a great way to increase mobility through spinal extension. Pressing firmly into the palms, push the chest up away from the floor while drawing in the abs. Keep the tummy tight, pulling belly button in and keep neck neutral (don’t look up or jut the chin out). Do not let shoulder elevate towards the ears, draw the shoulders down your back for an even longer spine. There are many back extension exercises, but the cobra pose is simple and can be repeated over and over as needed. Exhale and you press up, inhale as you lower.</image:caption>

      <image:title>Blog - Chimichurri - Sauce of the Summer - Simply chop one bunch of cilantro and one bunch of parsley as finely as possible. Add in a couple generous spoonfuls of minced garlic and shallots, ¼ cup of red wine vinegar and ½ cup of olive oil. Stir until it reaches a pesto-like consistency. Add chopped Jalapeno for extra zing! Salt and Pepper to taste. Another option is to dump all ingredients in the food processor and skip the chopping altogether!</image:title>
      <image:caption>We served our chimichurri on a filet mignon one night and saved the leftovers for a chicken breast topping later in the week. It's also a great marinade for veggies and fish. This sauce will make any dish taste like summer!</image:caption>

If you’d like, top the fillet with breadcrumbs for added crunch. Pop in the oven for about 15-20 minutes (depending on desired doneness and thickness of the fillet). <image:title>Blog - Vegetarian Chili - Great for large groups! - We started by sautéing the veggies with olive oil and minced garlic until they became soft, seasoning with salt and pepper. For a large batch, we recommend at least two bell peppers, 5 large carrots and one large onion. Next, we added cans of black beans, red kidney beans and crushed tomatoes. If you want a bigger batch, add more tomato, as this is the base liquid of the chili. Next we seasoned with our favorite chili spices: smoked cayenne, chili powder, crushed red pepper, and cumin. Depending on how spicy you like your chili, add or omit the chili and cayenne.</image:title>
      <image:caption>We stirred the ingredients and let simmer for about 40 minutes. The longer, the better, as flavor will develop over time. Stirring and tasting periodically is key, so you can add salt and pepper as needed.</image:caption>

      <image:title>Blog - Vegetarian Chili - Great for large groups! - Delicious toppings totally make the chili experience, right?! We loaded our bowls with avocado and shredded cheddar cheese for creaminess. Other garnishes that enhance a yummy chili are fresh cilantro, sour cream, diced red onion, black olives, tortilla chips, or shredded lettuce.</image:title>
      <image:caption>This is perfect party food- guests can serve their own topping and make it their own. Its filling, even for the biggest appetites, and most importantly, there’s only one pot to clean!</image:caption>

      <image:title>Blog - Whole Chicken Dinner - Always wanted to cook a whole bird? Now’s your chance- it’s easier than you think!</image:title>
      <image:caption>We’re lucky to have a backyard BBQ at our Harlem brownstone, but don’t worry, this can also be done in a conventional oven. Find a chicken at your grocery store that looks good to you and grab a generous helping of your favorite produce to serve with it. You want to rub down the bird with olive oil and your favorite spices. Don’t forget to get oil and spice rub inside the cavity as well. Be generous with salt and pepper. We used a mixture of garlic, cumin, ground pepper, smoked paprika, chili powder, smoked salt and brown sugar.</image:caption>

      <image:title>Blog - Whole Chicken Dinner - We set our chicken on indirect heat in the charcoal grill and let it do its thing for about 3 hours. Periodically, we checked in and fed the smoker some of our favorite red oak chips to get that delicious smoky flavor. Another tip is to brush the chicken with a sauce to moisten the skin every 30 minutes or so- that’ll help create that delicious crunchy layer. Use your favorite store bought BBQ sauce or make your own. To make a delicious homemade sauce combine apple cider vinegar, ketchup, mustard, brown sugar, hot sauce and red crushed pepper seeds. And be sure to save some sauce for serving!</image:title>
